Anima Mundi 'Gres' Penedès, 2024 honey with dark rye and demeraraThis wine is 100% Xarel lo planted between 1956 and 1974, on very calcareous soil. 1 3 of the juice is direct pressed and aged in used French oak, 1 3 of it is pressed into clay amphora, and 1 3 sees a 14 day skin contact and is aged in stainless steel. The resulting blend is a balance between texture, vibrant fruit, and a bit fuller structure due to the skin contact. Pair it with pan fried garlic shrimp and some toasted sourdough.
