100% Pinot Noir grapes sourced from a 5-hectare single vineyard at 215 meters altitude
foraging and distilling the maguey in the Zapotec town of Santiago Matatlán
is largely credited with establishing the Champagne AOC in 1927
As the name would suggest this wine is bursting with pomegranate as well as grapefruit and cherry flavors
Sylvie Esmonin Gevrey-Chambertin, 2020 RCNOV2625 100% Pinot Noir grapes sourcedThis is made from 45 year old Pinot Noir vines from the lieu dit Les Crais. It is classic old school Burgundy, being quite rich and extracted with vibrant dark fruit aromatics. It is full and supple with mouthwatering fruit and super soft tannins. Unfined and unfiltered. We would pair this with beef bourguignon, or another rich, meaty stew to tackle the fullness of the wine.
